  • 1 handful basil leaves, chopped or torn Parsley can be used as an alternative.
For Serving
  • 3 Tbsp grated Parmesan cheese Add more or skip for vegan.

Method
 

Step-by-Step Instructions for Pasta Napoletana
  1. Fill a large pot with water and add a pinch of salt. Bring to a rolling boil.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté onion for 5-6 minutes until soft.
  3. Add minced garlic and cook for another 2 minutes until fragrant.
  4. Incorporate the can of diced tomatoes, ½ teaspoon salt, and ⅛ teaspoon black pepper. Cook on medium heat for 15 minutes.
  5. Cook pasta in boiling water for 8-10 minutes until al dente. Reserve ½ cup of pasta water before draining.
  6. Adjust seasoning of the sauce and mix in cooked pasta, adding reserved pasta water if needed.
  7. Fold in chopped basil leaves and serve hot, topped with grated Parmesan cheese.
