- Start by peeling, pitting, and slicing 2–3 fresh, ripe peaches. Place the peach slices into a blender.
- Add 1/2 cup of peach juice to the blender with the sliced peaches. Blend on high for about 30 to 45 seconds until smooth.
- In a mixing glass, combine the peach puree with 1–2 cups of chilled sparkling apple cider or sparkling grape juice. Stir gently.
- Fill 4 to 6 elegant serving glasses with ice cubes about halfway full.
- Carefully pour the peach mixture over the ice-filled glasses, filling them about three-quarters full.
- Garnish each glass with a few fresh raspberries and a sprig of mint on top. Serve immediately.
