Step-by-Step Instructions for Tofu Fried Chicken
  1. Begin by freezing the extra firm tofu overnight to enhance its texture. Once frozen, thaw the tofu, then place it between two plates and apply weight on top to press out excess water for about 30 minutes.
  2. After pressing, cut the tofu into 1-inch cubes. In a bowl, soak these tofu cubes in vegan chicken broth for 15 minutes.
  3. While the tofu is marinating, set up your breading station. In one bowl, whisk together plant-based milk, apple cider vinegar, and hot sauce for your wet mix. In a separate bowl, combine flour, cornstarch, cornmeal, and all the seasonings.
  4. In a deep fryer or a large pan, heat oil to 370°F (187°C). Use enough oil so the tofu can float freely while frying.
  5. Take the marinated tofu cubes and individually dip them in the wet mixture, then coat them in the dry mix. For extra crunch, repeat the dipping process.
  6. Carefully lower the breaded tofu into the hot oil in batches, cooking each piece for 3-4 minutes or until golden brown. Use a slotted spoon to remove them from the oil and place them on paper towels.
