Step-by-Step Instructions
  1. Grease your slow cooker with a light coating of cooking spray or olive oil.
  2. Layer half of the chicken breast evenly on the bottom of the slow cooker.
  3. Add half of the tortillas on top of the chicken, followed by half of the enchilada sauce.
  4. Sprinkle half of your cheese blend over the sauce.
  5. Repeat the layers with the remaining chicken, tortillas, sauce, and cheese.
  6. Cover and cook on low heat for about 5 hours or until chicken is tender.
  7. Optionally, transfer to an air fryer-safe dish and cook at 400°F for about 5-10 minutes for a crispy top.
