Step-by-Step Instructions for Cinnamon Apple Cake
  1. Preheat your oven to 180°C (160°C for fan ovens) and line an 8x10" baking tray with non-stick baking paper.
  2. Peel and dice 3 cups of apples, mix with 2 tablespoons of granulated sugar and 1 teaspoon of cinnamon, then set aside.
  3. Combine ½ cup of light brown sugar, 2 tablespoons of cinnamon, and ¼ cup of melted unsalted butter in a bowl.
  4. Whisk together 2 cups of plain flour, 1 cup of caster sugar, and 2 teaspoons of baking powder in a large bowl.
  5. Add 1 cup of whole milk, 1 teaspoon of vanilla extract, and 2 large eggs to the dry ingredients and mix gently.
  6. Fold in the diced apples into the batter, then pour into the lined baking tray.
  7. Dollop the cinnamon mixture over the batter and swirl it gently with a knife.
  8. Bake for 40-45 minutes until a toothpick comes out mostly clean.
  9. Prepare the glaze by mixing 1 cup of icing sugar with 2 tablespoons of milk in a bowl until smooth.
