Step-by-Step Instructions for Cinnamon Apple Cake
- Preheat your oven to 180°C (160°C for fan ovens) and line an 8x10" baking tray with non-stick baking paper.
- Peel and dice 3 cups of apples, mix with 2 tablespoons of granulated sugar and 1 teaspoon of cinnamon, then set aside.
- Combine ½ cup of light brown sugar, 2 tablespoons of cinnamon, and ¼ cup of melted unsalted butter in a bowl.
- Whisk together 2 cups of plain flour, 1 cup of caster sugar, and 2 teaspoons of baking powder in a large bowl.
- Add 1 cup of whole milk, 1 teaspoon of vanilla extract, and 2 large eggs to the dry ingredients and mix gently.
- Fold in the diced apples into the batter, then pour into the lined baking tray.
- Dollop the cinnamon mixture over the batter and swirl it gently with a knife.
- Bake for 40-45 minutes until a toothpick comes out mostly clean.
- Prepare the glaze by mixing 1 cup of icing sugar with 2 tablespoons of milk in a bowl until smooth.
