Meatball Preparation
- In a large mixing bowl, combine ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, chopped herbs, olive oil, salt, and pepper. Mix well and refrigerate for 2 hours.
- Preheat your oven to 425°F (220°C). Shape the meat mixture into 1 to 1.5 inch meatballs and place on a parchment-lined baking sheet. Bake for 30-40 minutes or until cooked through.
Potato Preparation
- Wash and cut potatoes into wedges. Toss with olive oil, salt, cumin, paprika, and oregano. Spread on a baking sheet and roast in the oven for 40-60 minutes.
Tzatziki Sauce
- In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill (or mint), olive oil, and salt and pepper. Mix until smooth and refrigerate.
Assembly
- Layer lettuce, tomatoes, cucumbers, and red onions on a plate. Add roasted potatoes and meatballs, then drizzle with tzatziki sauce and garnish with fresh herbs.
