Ingredients
  

For the Meatballs
  • 1 pound Ground Beef can substitute with ground lamb
  • 3 cloves Garlic minced
  • 1 medium Onion finely minced
  • 1 cup Breadcrumbs gluten-free options if needed
  • 1 teaspoon Baking Soda
  • 1/2 cup Fresh Herbs mix of parsley, mint, coriander, chopped
  • 2 tablespoons Olive Oil extra virgin is best
  • to taste Salt & Pepper adjust according to your preference
For the Bowl
  • 4 medium Potatoes Yukon Gold or red potatoes preferred
  • to taste Lettuce, Tomatoes, Cucumbers, Red Onion, Kalamata Olives customizable
  • 2 tablespoons Lemon Juice fresh juice recommended
For the Tzatziki
  • 1 medium Cucumber grated and drained
  • 1 cup Greek Yogurt low-fat can be used
  • 1 tablespoon Dill or Mint fresh preferred, dried can substitute

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, chopped herbs, olive oil, salt, and pepper. Mix well and refrigerate for 2 hours.
  2. Preheat your oven to 425°F (220°C). Shape the meat mixture into 1 to 1.5 inch meatballs and place on a parchment-lined baking sheet. Bake for 30-40 minutes or until cooked through.
Potato Preparation
  1. Wash and cut potatoes into wedges. Toss with olive oil, salt, cumin, paprika, and oregano. Spread on a baking sheet and roast in the oven for 40-60 minutes.
Tzatziki Sauce
  1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill (or mint), olive oil, and salt and pepper. Mix until smooth and refrigerate.
Assembly
  1. Layer lettuce, tomatoes, cucumbers, and red onions on a plate. Add roasted potatoes and meatballs, then drizzle with tzatziki sauce and garnish with fresh herbs.
