- Preheat your oven to 350°F (175°C) and prepare your 9x5-inch loaf pan by greasing it lightly or lining it with parchment paper.
- In a large mixing bowl, combine 2 beaten eggs with 1 cup of granulated sugar, 1/2 cup of brown sugar, 1/2 cup of vegetable oil, 1 cup of buttermilk, and 1 teaspoon of vanilla extract. Whisk until smooth.
- Sift in 2 cups of self-rising flour along with 1/2 teaspoon of salt into the wet mixture. Gently fold until just combined.
- Fold in 1 cup of finely chopped pecans into the batter.
- Pour the prepared batter into the greased loaf pan and smooth the top.
- Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick in the center comes out clean.
