- Preheat the oven to 350°F (180°C) and prepare an un-greased loaf pan.
- In a small saucepan over medium heat, melt the sugar until it turns amber, about 8-10 minutes. Pour into the loaf pan and let harden.
- In a large mixing bowl, whisk together sweetened condensed milk, coconut milk, eggs, vanilla extract, and shredded coconut until smooth. Pour over the hardened caramel.
- Place the loaf pan in a larger baking dish filled with hot water, and bake for 50-55 minutes until golden and set.
- Let the flan cool to room temperature for 30 minutes, then chill in the refrigerator for at least 3 hours.
- To serve, place the loaf pan in warm water for a few minutes, run a knife around the edges, and invert onto a serving plate.
