Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 13 x 9 x 2-inch baking pan.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and cinnamon. Pour in melted butter and stir until resembling wet sand. Press into the pan and bake for 10 minutes.
  3. In a large bowl, beat together cream cheese and sugar until fluffy. Blend in dulce de leche, then add eggs one at a time, and finally mix in vanilla. Spread over cooled crust.
  4. Bake for approximately 38 minutes until edges puff and center is firm. Cool on a wire rack.
  5. Mix remaining dulce de leche with heavy cream in a microwave-safe bowl; heat until melted and pourable. Spread over the cheesecake layer.
  6. Chill in the refrigerator for 1 hour. Cut into 24 bars, and sprinkle fleur de sel before serving.
