Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop sweet potatoes into 1-inch cubes, dice the onion, green pepper, and mince the garlic.
  3. In a greased casserole dish, heat oil, sauté sweet potatoes, onion, and green pepper for 8-9 minutes; add garlic in the last minute.
  4. Cook turkey sausage in the same pan until browned and crumbled, about 5-7 minutes; mix with sautéed vegetables.
  5. Whisk together eggs, milk, thyme, salt, pepper, and cheese in a large bowl until well combined.
  6. Pour the egg mixture over the sausage and vegetable blend, stir gently to combine.
  7. Bake in the preheated oven for 40-45 minutes, until set and golden brown on top.
  8. Allow the casserole to rest for 5-10 minutes before slicing and serving.
