Method
 

Step-by-Step Instructions
  1. Rinse the whole oranges, place in a saucepan, cover with water, boil, then simmer for about one hour until soft. Drain and cool.
  2. Cut cooled oranges in half, remove seeds, and blend until smooth.
  3. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  4. Mix orange puree, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla in a bowl until smooth.
  5. Pour batter into the pan and bake for about 60 minutes. Check doneness with a toothpick.
  6. Make the glaze by combining honey and orange juice in a saucepan, boil and cook until reduced by half.
  7. Once the cake is cooled, brush the glaze over the top and let sit for 30 minutes before removing from pan.
