- Rinse the whole oranges, place in a saucepan, cover with water, boil, then simmer for about one hour until soft. Drain and cool.
- Cut cooled oranges in half, remove seeds, and blend until smooth.
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
- Mix orange puree, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla in a bowl until smooth.
- Pour batter into the pan and bake for about 60 minutes. Check doneness with a toothpick.
- Make the glaze by combining honey and orange juice in a saucepan, boil and cook until reduced by half.
- Once the cake is cooled, brush the glaze over the top and let sit for 30 minutes before removing from pan.
