- Preheat your oven to 350°F (175°C) and grease your pan with coconut oil or butter.
- In a large mixing bowl, whisk together the sweet potato, eggs, maple syrup, coconut oil, and vanilla until smooth.
- Add in the grated ginger, cinnamon, nutmeg (if using), baking soda, and salt. Mix until fully incorporated.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 25-30 minutes until a toothpick comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for about 10 minutes before inverting onto a wire rack.
