  • 1 cup milk or almond milk for dairy-free
  • 1 tablespoon vinegar or lemon juice
  • 1 cup all-purpose flour or whole wheat flour
  • 2 tablespoons sugar brown sugar for deeper flavor
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda ensure it's fresh
  • 1/4 teaspoon salt omit for low-sodium
  • 1 large egg or ground flaxseed and water for vegan
  • 2 tablespoons butter (melted) or coconut oil for dairy-free
Cinnamon Swirl Mixture
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon adjust to liking
  • 2 tablespoons flour
  • 2 tablespoons butter (melted)

Method
 

Preparation
  1. Combine 1 cup of milk with 1 tablespoon of vinegar in a bowl. Let sit for 5 minutes to thicken.
  2. In a separate bowl, whisk together 1 cup flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  3. In the soured milk bowl, whisk in 1 large egg and 2 tablespoons melted butter. Mix with dry ingredients until just combined.
  4. For the swirl, mix 1/4 cup brown sugar, 1 teaspoon cinnamon, and 2 tablespoons flour with 2 tablespoons melted butter until smooth.
  5. Preheat a greased griddle over medium heat (350°F). Pour 1/4 cup batter, then drizzle cinnamon swirl mixture on top.
  6. Cook until bubbles form and edges set (2-3 minutes). Flip and cook until golden brown (30 seconds to 1 minute).
  7. Serve warm with butter and maple syrup or cream cheese frosting.
