Preparation
- Combine 1 cup of milk with 1 tablespoon of vinegar in a bowl. Let sit for 5 minutes to thicken.
- In a separate bowl, whisk together 1 cup flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
- In the soured milk bowl, whisk in 1 large egg and 2 tablespoons melted butter. Mix with dry ingredients until just combined.
- For the swirl, mix 1/4 cup brown sugar, 1 teaspoon cinnamon, and 2 tablespoons flour with 2 tablespoons melted butter until smooth.
- Preheat a greased griddle over medium heat (350°F). Pour 1/4 cup batter, then drizzle cinnamon swirl mixture on top.
- Cook until bubbles form and edges set (2-3 minutes). Flip and cook until golden brown (30 seconds to 1 minute).
- Serve warm with butter and maple syrup or cream cheese frosting.
