  1. Gather your ingredients and tools: a medium bowl, a high-speed blender, a spatula, and a non-stick skillet. In the medium bowl, whisk together the flour and baking powder until thoroughly combined.
  2. In the high-speed blender, add the cottage cheese, eggs, milk, melted coconut oil, maple syrup, and vanilla extract. Blend the mixture on high for approximately 30 seconds or until smooth and creamy.
  3. Pour the smooth cottage cheese mixture into the bowl with the dry ingredients. Using a spatula, gently fold the wet and dry ingredients together until just combined.
