Step-by-Step Instructions
- Start by warming the whole milk to 105°F-110°F in a small saucepan or microwave. Combine with active dry yeast and a teaspoon of sugar. Let sit for about 10 minutes until bubbly.
- In a stand mixer, combine room-temperature eggs, melted butter, and the yeast mixture. Gradually add flour, sugar, and salt while mixing. Knead for about 5 minutes until smooth and elastic.
- Transfer the dough to a greased bowl, cover with a warm cloth, and let rise in a warm area for about 1 hour until doubled in size.
- Prepare the filling by combining strawberries, sugar, and lemon juice in a saucepan. Simmer for about 10 minutes, mash slightly, stir in cornstarch, cool in the fridge.
- Roll the dough into a rectangle about ¼ inch thick. Spread cooled jam, cut into strips, roll into spirals and place in a greased baking dish. Let rise for about 30 minutes.
- Preheat the oven to 350°F. Bake rolls for 25-30 minutes until golden brown.
- While rolls bake, prepare icing by beating cream cheese, powder sugar, and lemon zest. Gradually add milk to desired consistency.
- Spread icing over warm rolls and serve.

Notes
These Strawberry Rolls are best enjoyed warm. The lemon icing melts beautifully into the strawberry filling.
