Ingredients
  

For the Salad
  • 1 cup Quinoa rinsed
  • 1 bunch Cilantro include both stems and leaves
  • 1 medium Cucumber diced; may substitute with bell peppers
  • 1 can Black Beans drained; chickpeas can be used as an alternative
For the Dressing
  • 2 tablespoons Lime Juice & Zest fresh lime
  • 1 clove Garlic minced
  • 2 scallions Scallions chopped; can substitute with chives
  • 1 tablespoon Maple Syrup can use honey if not vegan
  • 1 tablespoon White Wine Vinegar

Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of quinoa under cold water. In a medium pot, combine the rinsed quinoa with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes. Fluff and cool in a large bowl.
  2. In a food processor, blend together cilantro, scallions, garlic, lime juice and zest, white wine vinegar, and maple syrup until smooth.
  3. In the bowl with the cooled quinoa, add black beans, cucumber, and additional toppings like red onion. Stir gently to combine.
  4. Drizzle the dressing over the salad mixture, tossing gently to coat all ingredients without breaking the quinoa.
  5. Taste and season with salt and pepper as desired. Let chill for at least 15 minutes before serving.
