- Rinse 1 cup of quinoa under cold water. In a medium pot, combine the rinsed quinoa with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes. Fluff and cool in a large bowl.
- In a food processor, blend together cilantro, scallions, garlic, lime juice and zest, white wine vinegar, and maple syrup until smooth.
- In the bowl with the cooled quinoa, add black beans, cucumber, and additional toppings like red onion. Stir gently to combine.
- Drizzle the dressing over the salad mixture, tossing gently to coat all ingredients without breaking the quinoa.
- Taste and season with salt and pepper as desired. Let chill for at least 15 minutes before serving.
