  • 1 cup Bell Pepper Any color works.
  • 1 medium Red Onion Can swap with shallots for a milder taste.
  • 2 cloves Garlic Fresh minced.
  • 1 medium Jalapeno Adjust heat to taste; remove seeds for milder salsa.
  • 1/2 cup Fresh Cilantro Can substitute parsley if preferred.
Zesty Kick
  • 1 each Lime Use both zest and juice.
  • 2 tablespoons Extra-Virgin Olive Oil Opt for high-quality, cold-pressed.
  • 1 teaspoon Kosher Salt Adjust according to taste.

Method
 

Preparation
  1. Wash and prep vegetables, core and quarter tomatoes, and dice bell pepper and red onion.
  2. Mince garlic finely and prepare jalapeno by removing seeds and veins if desired.
Mixing
  1. Combine all chopped veggies in a food processor and pulse until slightly chunky.
  2. Transfer to a large bowl and add lime zest and juice, olive oil, and kosher salt.
  3. Mix gently until well combined.
Flavor Adjustment
  1. Taste and adjust flavor with more jalapeno or salt as needed.
Resting
  1. Let the salsa rest for about 15 minutes to allow flavors to meld.
