Step-by-Step Instructions
  1. In a skillet over medium heat, cook the bacon slices until crispy, about 7-10 minutes. Turn occasionally, then transfer to a paper towel-lined plate to drain and chop into small pieces.
  2. Bring a large pot of salted water to a boil. Add the frozen cheese tortellini and cook according to package instructions (about 3-5 minutes) until they float and are tender. Drain and rinse under cold water to stop cooking, let cool.
  3. In a large mixing bowl, whisk together mayonnaise, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes until smooth.
  4. Gently fold the tortellini, chopped bacon, pepperoncini, red onion, cherry tomatoes, and Parmesan into the bowl with the dressing. Stir until evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to let flavors meld.
  6. Just before serving, stir again, plate in a serving dish, and enjoy!
