- In a skillet over medium heat, cook the bacon slices until crispy, about 7-10 minutes. Turn occasionally, then transfer to a paper towel-lined plate to drain and chop into small pieces.
- Bring a large pot of salted water to a boil. Add the frozen cheese tortellini and cook according to package instructions (about 3-5 minutes) until they float and are tender. Drain and rinse under cold water to stop cooking, let cool.
- In a large mixing bowl, whisk together mayonnaise, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes until smooth.
- Gently fold the tortellini, chopped bacon, pepperoncini, red onion, cherry tomatoes, and Parmesan into the bowl with the dressing. Stir until evenly coated.
