  3. Heat about ½ inch of canola oil in a large frying pan to 350°F.
  4. Scoop approximately ½ cup of the potato mixture and shape it into a patty. Drop it into the hot oil.
  5. Fry each patty for 2.5 to 3 minutes until golden brown, flipping halfway through.
  6. Transfer the patties to a cooling rack lined with paper towels to absorb excess oil.
