Preparation
- In a mixing bowl, combine rolled oats, almond butter, honey, and vanilla extract. Stir until cohesive and sticky, taking about 3-4 minutes.
- Line a muffin pan with muffin liners. Press portions of the granola mixture evenly into each liner, forming a firm base about 1/4 inch thick, taking around 5-7 minutes.
- Spoon Greek yogurt into each granola cup, smoothing it to create an even layer.
- Scatter fresh berries on top of the yogurt, optionally adding extra granola crumbles for texture.
- Place the muffin pan in the freezer for at least 3 hours until firm.
- Remove from the freezer and let sit at room temperature for 5-10 minutes before serving.
