Method
 

Preparation
  1. In a mixing bowl, combine rolled oats, almond butter, honey, and vanilla extract. Stir until cohesive and sticky, taking about 3-4 minutes.
  2. Line a muffin pan with muffin liners. Press portions of the granola mixture evenly into each liner, forming a firm base about 1/4 inch thick, taking around 5-7 minutes.
  3. Spoon Greek yogurt into each granola cup, smoothing it to create an even layer.
  4. Scatter fresh berries on top of the yogurt, optionally adding extra granola crumbles for texture.
  5. Place the muffin pan in the freezer for at least 3 hours until firm.
  6. Remove from the freezer and let sit at room temperature for 5-10 minutes before serving.
