Method
 

Preparation
  1. Preheat the grill pan over medium-high heat or outdoors grill to medium.
  2. Slice the halloumi cheese into half-inch thick slices and brush with olive oil.
  3. Grill halloumi slices for 2-3 minutes on each side until golden brown.
  4. Toss salad greens, sliced cucumbers, and halved tomatoes in a large bowl.
  5. Whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  6. Add grilled halloumi to the salad and drizzle with dressing. Toss gently.
