Method
 

Step-by-Step Instructions
  1. In a medium bowl or zip-top bag, combine the thin-sliced boneless skinless chicken breasts, island salsa, fresh lime juice, olive oil, and freshly ground black pepper. Marinate in the refrigerator for at least 30 minutes.
  2. Prepare your grill by lightly oiling the grates. Preheat the grill to medium-high heat, around 400°F.
  3. Slice the yellow bell pepper into strips. Place them in a grill basket with olive oil, kosher salt, and black pepper.
  4. Add the marinated chicken and grill basket with peppers to the hot grill. Cook the chicken for 4-5 minutes on each side until it reaches 165°F.
  5. Remove from the grill and let rest for a few minutes. Top with additional salsa, diced mango, and pineapple. Optionally, sprinkle fresh cilantro before serving.
