  • 1 lb Large shrimp peeled and deveined
  • 2 tbsp Olive oil can substitute with avocado or coconut oil
  • 1 tsp Garlic powder or use fresh minced garlic
  • 1 tsp Paprika smoked paprika adds a deeper flavor
  • 1/2 tsp Cayenne pepper adjust to taste for spice level
  • 1 tsp Salt coarse salt for extra bite
  • 1/2 tsp Black pepper
For the Coulis
  • 1 cup Mango ripe and diced
  • 2 tbsp Lime freshly squeezed
  • 1 small Jalapeño pepper diced, use milder peppers as an alternative
  • 1 tbsp Honey optional

Method
 

Step‑By‑Step Instructions
  1. In a large bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and black pepper. Add the shrimp, tossing to coat. Marinate for about 10 minutes.
  2. In a blender, add the diced mango, lime juice, jalapeño, and honey. Blend until smooth, then refrigerate to chill for at least 10 minutes.
  3. Preheat the grill to medium-high heat (about 400°F / 204°C) and oil the grates with a paper towel dipped in oil.
  4. Thread the marinated shrimp onto skewers with gaps between them. Soak wooden skewers in water for 30 minutes prior to grilling.
  5. Grill shrimp for 2-3 minutes on each side until they are opaque and have grill marks.
  6. Remove from grill, let rest, then serve with the mango lime coulis drizzled over top or as a side for dipping.
