- In a large bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and black pepper. Add the shrimp, tossing to coat. Marinate for about 10 minutes.
- In a blender, add the diced mango, lime juice, jalapeño, and honey. Blend until smooth, then refrigerate to chill for at least 10 minutes.
- Preheat the grill to medium-high heat (about 400°F / 204°C) and oil the grates with a paper towel dipped in oil.
- Thread the marinated shrimp onto skewers with gaps between them. Soak wooden skewers in water for 30 minutes prior to grilling.
- Grill shrimp for 2-3 minutes on each side until they are opaque and have grill marks.
- Remove from grill, let rest, then serve with the mango lime coulis drizzled over top or as a side for dipping.
