  • 4 cups Vegetables Steamed broccoli or green beans
  • 2 cups Rice Cooked white or brown rice, quinoa, or farro

Method
 

Step‑by‑Step Instructions
  1. Begin by cooking the rice and your choice of vegetables according to package directions.
  2. In a large sauté pan, heat olive oil over medium-high heat. Add cubed chicken and cook for about 10 minutes.
  3. While the chicken is cooking, combine sauce ingredients in a mixing bowl.
  4. Once the chicken is fully cooked, set it aside in a bowl.
  5. Pour the sauce mixture into the same pan, bring to a boil, then reduce to a simmer for 15-20 minutes.
  6. Return sautéed chicken back into the pan and stir to coat in the sauce for an additional 2-3 minutes.
  7. Serve with steamed vegetables and rice, then enjoy your meal.
