  • 1 tbsp Sesame Oil or olive oil
  • 1 medium Yellow Onion or white onion
  • 1 cup Shredded Carrots
  • 3 cups Green Cabbage chopped
  • 4 cups Chicken Broth low-sodium
  • 1 tbsp Rice Vinegar or apple cider vinegar
  • to taste Salt
  • to taste Pepper
For the Garnish
  • 4 stalks Green Onions chopped
  • 2 large Beaten Eggs optional
  • to taste Red Pepper Flakes or Sriracha

Step-by-Step Instructions
  1. In a large pot over medium-high heat, add the ground pork and cook for about 5-7 minutes until browned. Season with salt and pepper.
  2. Add diced yellow onion, minced garlic, and fresh ginger; sauté for 3-4 minutes until onions are translucent.
  3. Stir in soy sauce, sesame oil, and rice vinegar. Pour in chicken broth and bring to a boil.
  4. Add shredded carrots and chopped green cabbage, stir to combine, reduce heat, and simmer uncovered for 15 minutes.
  5. If adding, drizzle beaten eggs slowly into the simmering soup while stirring to create egg ribbons.
  6. Taste and adjust seasoning. Serve hot, garnished with reserved green onions and optional red pepper flakes or sriracha.
