For the Pasta
  • 8 ounces Bowtie Pasta can substitute with rigatoni or penne
For the Toppings
  • 1 cup Ricotta Cheese or cottage cheese
  • 1 cup Mozzarella Cheese shredded or diced
  • 1/2 cup Parmesan Cheese shaved or grated
  • 2 tablespoons Fresh Parsley optional garnish

Step-by-Step Instructions for Easy Lasagna Soup
  1. Heat a 4.5-quart soup pot over medium-high heat, add olive oil, and warm for 1-2 minutes until shimmering.
  2. Add ground beef, diced onion, and minced garlic; sauté for 5-7 minutes until the beef is cooked and onions are translucent.
  3. Stir in diced tomatoes, tomato sauce, and tomato paste, combining well. Pour in chicken broth and water, sprinkle with Italian seasoning, salt, and black pepper.
  4. Add bowtie pasta to the pot, increase heat to boil, then reduce to medium simmer. Cook for 10-15 minutes until pasta is tender.
  5. Check soup consistency; add more water or broth if too thick.
