For the Crust
  • 2 pre-made Pie crusts Homemade crust can be used
  • 1 large Egg Beaten for egg wash, can substitute with milk

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and tools.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, sauté until translucent, about 3-4 minutes.
  3. Add diced carrots and chopped celery to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Pour in heavy cream and chicken or seafood stock. Let the mixture simmer for 3-5 minutes.
  5. Fold in lobster meat and frozen peas. Cook for an additional 5 minutes until heated through.
  6. Remove from heat and add fresh thyme, lemon juice, salt, and black pepper. Stir well.
  7. Roll out one pie crust into a pie dish and fill it with the lobster filling.
  8. Place the second crust on top, crimp the edges to seal, and cut slits for steam to escape.
  9. Brush the top crust with beaten egg for a golden finish.
  10. Bake for 30-35 minutes until the crust is golden brown.
  11. Let the pie cool for 10-15 minutes before serving.
