Cooking Steps
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until well-blended, then add the chicken thighs and marinate for at least 15 minutes.
- Peel and chop russet potatoes into even-sized pieces. Place in a pot of salted water and boil until fork-tender, about 15-20 minutes. Drain and set aside.
- Return the drained potatoes to the pot, add milk, unsalted butter, and smoked gouda cheese. Mash until smooth and creamy. Season with salt and pepper to taste.
- Place the marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from oven and allow to rest for a few minutes. Serve with creamy smoked gouda mashed potatoes and drizzle with cooking juices.
