Method
 

Cooking Steps
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until well-blended, then add the chicken thighs and marinate for at least 15 minutes.
  3. Peel and chop russet potatoes into even-sized pieces. Place in a pot of salted water and boil until fork-tender, about 15-20 minutes. Drain and set aside.
  4. Return the drained potatoes to the pot, add milk, unsalted butter, and smoked gouda cheese. Mash until smooth and creamy. Season with salt and pepper to taste.
  5. Place the marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Remove from oven and allow to rest for a few minutes. Serve with creamy smoked gouda mashed potatoes and drizzle with cooking juices.
