Cupcake Batter
  • 1 cup All-Purpose Flour substitute with gluten-free flour for gluten-free option
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Unsalted Butter softened
  • 1 cup Granulated Sugar
  • 2 large Eggs best at room temperature
  • 1/2 cup Honey
  • 1/2 cup Whole Milk can be replaced with dairy-free milk
  • 1 tsp Vanilla Extract
Cream Cheese Filling
  • 8 oz Cream Cheese softened
  • 1/4 cup Granulated Sugar
  • 1 large Egg Yolk
  • 1 tsp Vanilla Extract
Optional Toppings
  • 1 medium Peach Slices for garnish
  • 2 tbsp Honey Drizzle for serving
  • 1/4 cup Crushed Graham Crackers for topping

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and line muffin pan with cupcake liners.
  2. In a bowl, beat cream cheese, granulated sugar, egg yolk, and vanilla until smooth. Set aside.
  3. Whisk together flour, baking powder, and salt in another bowl.
  4. Cream butter and sugar until fluffy, then add eggs, honey, and vanilla, mixing well.
  5. Gradually mix in flour mixture and milk, fold in diced peaches.
  6. Fill cupcake liners halfway with batter, add cream cheese filling, then top with more batter.
  7. Bake for 18-22 minutes until golden and toothpick comes out clean.
  8. Cool in pan for 5 minutes then transfer to wire rack.
  9. Optional: Garnish with peach slices, honey drizzle, and crushed graham crackers.
