  1. Step 1: Prepare Lobsters - Bring a large pot of salted water to a vigorous boil. Carefully add the lobsters and cook for 8-10 minutes, or until they turn a bright red. Remove the lobsters from the pot and let them cool. Crack them open and extract the tender lobster meat, setting it aside.
  2. Step 2: Sauté Aromatics - In a large skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped shallots and sauté for about 2 minutes, stirring continuously until they turn translucent. Add the sliced mushrooms and cook for another 3-4 minutes, until tender and lightly golden.
  3. Step 3: Create Sauce Base - Pour in half a cup of white wine, scraping the bottom of the skillet to deglaze, and simmer for 3-4 minutes until reduced by half. Stir in one cup of heavy cream and cook for an additional 3 minutes until it thickens.
  4. Step 4: Combine Ingredients - Fold the cooked lobster meat into the creamy sauce, followed by a teaspoon of paprika and half of the grated Parmesan. Season with salt and pepper. Mix until the lobster is evenly coated.
  5. Step 5: Fill Shells & Broil - Preheat your broiler to high. Spoon the lobster mixture into the cleaned lobster shells, top each with remaining Parmesan cheese. Broil for 3-5 minutes until the cheese is bubbling and golden brown.
