  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Fresh Thyme Can substitute with oregano or rosemary.
  • 1 teaspoon Za'atar Optional.
  • 1/2 teaspoon Aleppo Pepper Can substitute with red pepper flakes.
  • 1/4 teaspoon Fresh Cracked Black Pepper
  • 2 tablespoons Honey Adjust to taste.
  • 1 pinch Flaky Salt For finishing touch.
  • 1 loaf Crusty Bread or Crackers For serving.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together extra virgin olive oil, fresh thyme, za'atar, Aleppo pepper, and black pepper.
  3. In an oven-safe dish, combine pitted olives, smashed garlic cloves, and lemon wedges. Pour the prepared marinade over this mixture and stir gently to combine.
  4. Pat the feta cheese dry, coat it with the marinade, and place it in the center of the olive mixture.
  5. Bake for about 20 minutes until the feta is gooey and the oil is bubbling.
  6. Drizzle honey over the baked feta and olives, then broil for an additional 3 minutes until slightly charred.
  7. Serve warm with crusty bread or crackers, drizzled with more honey and flaky salt.
