- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together extra virgin olive oil, fresh thyme, za'atar, Aleppo pepper, and black pepper.
- In an oven-safe dish, combine pitted olives, smashed garlic cloves, and lemon wedges. Pour the prepared marinade over this mixture and stir gently to combine.
- Pat the feta cheese dry, coat it with the marinade, and place it in the center of the olive mixture.
- Bake for about 20 minutes until the feta is gooey and the oil is bubbling.
- Drizzle honey over the baked feta and olives, then broil for an additional 3 minutes until slightly charred.
- Serve warm with crusty bread or crackers, drizzled with more honey and flaky salt.
