Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a sheet pan with parchment paper or foil.
  2. Carefully slice each croissant in half lengthwise. Layer two slices of gruyère cheese on the bottom half.
  3. Add generous slices of quality ham followed by another layer of cheese on top.
  4. Place the filled croissants on the sheet pan cut side up with enough space between them.
  5. Whisk together melted unsalted butter, honey, Dijon mustard, brown sugar, and poppy seeds until well combined.
  6. Apply the glaze generously over the tops of the croissants using a pastry brush.
  7. Bake for 7-9 minutes until the cheese is bubbling and they are golden-brown.
  8. Sprinkle sliced green onions over the warm croissants before serving.
