- Carefully slice each croissant in half lengthwise. Layer two slices of gruyère cheese on the bottom half.
- Add generous slices of quality ham followed by another layer of cheese on top.
- Place the filled croissants on the sheet pan cut side up with enough space between them.
- Whisk together melted unsalted butter, honey, Dijon mustard, brown sugar, and poppy seeds until well combined.
- Apply the glaze generously over the tops of the croissants using a pastry brush.
