- Cut chicken breasts or thighs into cutlets and season with salt and pepper. Heat a skillet over medium-high and add oil. Cook chicken for 6-8 minutes per side until golden and internal temperature reaches 165°F.
- In a bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix well and adjust sriracha to taste. Set aside.
- Once chicken is cooked, let it rest before slicing into smaller pieces for buns. Take a bun, add chicken, drizzle with Bang Bang sauce, and top with lettuce and cucumber.
