- In a food processor, combine shredded carrots, Medjool dates, walnuts, cinnamon, nutmeg, and shredded coconut. Pulse until the mixture forms a sticky dough.
- Continue to pulse until well combined and thick. Scrape down sides as needed.
- Roll a tablespoon of the mixture into a ball, about 1 inch in diameter. Repeat until all mixture is used.
- Optionally, roll each ball in shredded coconut and refrigerate for at least 1 hour before serving.
