Ingredients
  

For the Tostada Base
  • 8 Tostada Shells Store-bought or homemade
For the Guacamole
  • 2 Ripe Avocados Medium ripe
  • 1 tablespoon Fresh Lime Juice Freshly squeezed
  • 1 teaspoon Garlic Powder Adjust to taste
  • 1 pinch Salt to taste
  • 1 pinch Pepper Freshly ground black
For the Beans
  • 1 can (16 oz) Rosarita Traditional Refried Beans
  • 1 can Rotel Diced Tomatoes & Green Chilies Drained
  • 1 teaspoon Ancho Chili Powder Adjust to taste
  • 1/2 teaspoon Ground Cumin Adjust to taste
For the Toppings
  • 1 cup Shredded Iceberg or Romaine Lettuce Other greens can be swapped
  • 2 cups Shredded Rotisserie Chicken Can substitute with other cooked chicken
  • 1 cup Shredded Mexican Blend Cheese
  • 1/2 cup Pico de Gallo Homemade or store-bought
  • 1 cup Sour Cream For topping

Method
 

Preparation Steps
  1. Prepare Guacamole: Cut avocados in half, remove pit, and mash in a bowl. Add lime juice, garlic powder, salt, and pepper; mix well and set aside.
  2. Heat Beans: In a saucepan, combine refried beans, drained diced tomatoes, chili powder, and cumin. Heat until bubbling, about 5-7 minutes.
  3. Assemble Tostadas: Place tostada shells on a platter and spoon the warm bean mixture on each.
  4. Add Chicken: Distribute shredded chicken evenly over the bean layer on each tostada.
  5. Layer Lettuce and Cheese: Sprinkle lettuce and cheese on top of the chicken.
  6. Finish with Guacamole and Pico de Gallo: Add guacamole and sprinkle pico de gallo over each tostada.
  7. Serve: Top with sour cream and serve immediately with lime wedges.
