- In a large mixing bowl, combine 1 cup of quinoa flour and 1 cup of brown rice flour, adding baking powder and cocoa powder. Whisk until smooth.
- In another bowl, whip 3/4 cup of aquafaba until frothy, about 3-5 minutes. Add 1/2 cup maple syrup and 1/2 cup rice milk, mixing gently.
- Fold the wet mixture into the dry ingredients until just combined. Preheat oven to 350°F (175°C).
- Line a 9" baking pan with parchment, pour in batter, and bake for about 30 minutes, or until a toothpick comes out clean.
- Let the cake cool for at least 20 minutes on a wire rack, then cut into 2" rounds.
- Spread cranberry chia jam or puree between the cakes to assemble.
- Prepare ganache by melting chocolate with coconut milk. Drizzle over the assembled cakes and garnish with fresh cranberries.
