Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 cup of quinoa flour and 1 cup of brown rice flour, adding baking powder and cocoa powder. Whisk until smooth.
  2. In another bowl, whip 3/4 cup of aquafaba until frothy, about 3-5 minutes. Add 1/2 cup maple syrup and 1/2 cup rice milk, mixing gently.
  3. Fold the wet mixture into the dry ingredients until just combined. Preheat oven to 350°F (175°C).
  4. Line a 9" baking pan with parchment, pour in batter, and bake for about 30 minutes, or until a toothpick comes out clean.
  5. Let the cake cool for at least 20 minutes on a wire rack, then cut into 2" rounds.
  6. Spread cranberry chia jam or puree between the cakes to assemble.
  7. Prepare ganache by melting chocolate with coconut milk. Drizzle over the assembled cakes and garnish with fresh cranberries.
