  • 1 cup Fresh Lettuce Arugula or spinach can also be used.
  • 1 large Ripe Tomato Roasted peppers are a substitute.
For the Mayo
  • 1/2 cup Mayonnaise Greek yogurt can be used for a lighter touch.
  • 2 tablespoons Fresh Herbs (Parsley, Chives) Basil, dill, or tarragon are excellent options.
  • 2 cloves Garlic Roasted garlic can lend a sweeter taste.

Method
 

Step-by-Step Instructions
  1. Season boneless chicken breasts with salt, pepper, and favorite herbs. Let rest for 15 minutes.
  2. In a skillet, cook thick-cut bacon over medium heat for 6-8 minutes until crispy. Remove and drain on paper towel.
  3. In the same skillet, cook seasoned chicken breasts for 6-7 minutes on each side until golden brown and cooked through. Let rest for 5 minutes and then slice.
  4. In a bowl, mix mayonnaise, minced garlic, and fresh herbs. Season with salt and pepper to taste.
  5. Toast sourdough bread until golden brown.
  6. Assemble the sandwich by spreading herb mayo, adding lettuce, tomato, sliced chicken, and bacon. Top with another slice of herb mayo on the other slice of bread.
