  • 1 package Vegan Puff Pastry Make sure it's 'accidentally vegan'
  • 2 tsp Oil Any vegetable oil works great
  • 1 Yellow Onion Diced
  • 4 Garlic Cloves Minced
  • 1 can Black Beans About 15 oz, drained
  • 10-12 oz Vegan Chorizo Or Soyrizo if needed
  • 2 tsp Chili Powder
  • 1 tsp Dried Oregano
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Cayenne Pepper Adjust according to preference
  • Salt To taste
  • 8 oz Shredded Vegan Cheese Your favorite type
  • 3-4 Scallions Thinly sliced
For Serving
  • Salsa
  • Guacamole
  • Dairy-Free Sour Cream

Method
 

Preparation Steps
  1. Thaw the puff pastry while preheating the oven to 400°F (200°C) and preparing baking trays.
  2. Sauté the onion in oil until translucent, then add garlic and cook until fragrant.
  3. Combine black beans, vegan chorizo, spices in the skillet, warming through for 5 minutes.
  4. On a floured surface, roll out the pastry, add cheese, filling, and roll it tightly.
  5. Chill the roll wrapped in plastic wrap for 20 minutes.
  6. Slice the roll into 12 equal pinwheels and bake for 18-20 minutes until golden.
  7. Cool slightly before serving, pairing with preferred dips.
