Preparation Steps
- Heat apricot jam and water in a saucepan over low heat for 2-3 minutes until liquefied. Strain and cool.
- Combine vegan butter and yogurt in a food processor. Pulse, then add flour, coconut sugar, almond meal, and salt. Form into a ball and refrigerate for 30 minutes.
- Core and slice apples into ¼-inch pieces. Mix with organic cane sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Set aside for 10 minutes.
- Remove chilled crust, place apple filling in center, fold edges over, and brush with apricot glaze.
- Preheat oven to 400°F (200°C). Bake for 35-40 minutes until golden brown.
- Let cool on a wire rack for 15 minutes before serving warm.
