For Glazing
  • 2 tbsp Apricot Jam Use for glazing the crust.

Method
 

Preparation Steps
  1. Heat apricot jam and water in a saucepan over low heat for 2-3 minutes until liquefied. Strain and cool.
  2. Combine vegan butter and yogurt in a food processor. Pulse, then add flour, coconut sugar, almond meal, and salt. Form into a ball and refrigerate for 30 minutes.
  3. Core and slice apples into ¼-inch pieces. Mix with organic cane sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Set aside for 10 minutes.
  4. Remove chilled crust, place apple filling in center, fold edges over, and brush with apricot glaze.
  5. Preheat oven to 400°F (200°C). Bake for 35-40 minutes until golden brown.
  6. Let cool on a wire rack for 15 minutes before serving warm.
