For the Seasoning
  • ¼ tsp White pepper Black pepper can be used as an alternative.
  • 1 tbsp Soy sauce Consider low-sodium varieties.
For the Honey Butter Sauce
  • Neutral oil for frying Vegetable, canola, or peanut oil works well.
  • 2-3 cloves Garlic Can use garlic powder as a substitute.
  • 4 tbsp Honey Maple syrup can be a vegan substitute.
  • 4 tbsp Butter Opt for unsalted for better control over saltiness.
  • 1 tbsp Brown sugar White sugar can be a substitute.
  • 1 tbsp Sesame oil Olive oil can be used for a milder taste.
  • 1 tsp Crushed chili Omit for a mild flavor or substitute with paprika.

Equipment

  • skillet
  • medium bowl
  • shallow dish
  • paper towel

Method

Step-by-Step Instructions
  1. Cut 400 grams of chicken breast into bite-sized cubes. In a medium bowl, season the chicken with 1 tablespoon of soy sauce, ¼ teaspoon of white pepper, and 1 beaten egg. Mix well to coat.
  2. Pour 1 cup of cornstarch into a shallow dish. Dredge each seasoned chicken piece in the cornstarch and set aside.
  3. Heat enough neutral oil to cover the chicken to 350°F (180°C). Fry the coated chicken in batches for 1 to 2 minutes until lightly golden.
  4. Return the oil to heat and fry the chicken again for 2 to 3 minutes until golden brown and crispy.
  5. In a separate pan, melt 4 tablespoons of unsalted butter over medium heat. Add 2-3 minced garlic cloves and sauté for 1 to 2 minutes.
  6. Stir in 1 tablespoon of soy sauce, 4 tablespoons of honey, 1 tablespoon of brown sugar, and 1 tablespoon of sesame oil. Mix and allow it to thicken for 2-3 minutes.
  7. Add the fried chicken pieces to the sauce, tossing gently to coat each piece.
  8. Transfer to a serving dish and sprinkle with sesame seeds and chopped spring onions before serving.
