- Cut 400 grams of chicken breast into bite-sized cubes. In a medium bowl, season the chicken with 1 tablespoon of soy sauce, ¼ teaspoon of white pepper, and 1 beaten egg. Mix well to coat.
- Pour 1 cup of cornstarch into a shallow dish. Dredge each seasoned chicken piece in the cornstarch and set aside.
- Heat enough neutral oil to cover the chicken to 350°F (180°C). Fry the coated chicken in batches for 1 to 2 minutes until lightly golden.
- Return the oil to heat and fry the chicken again for 2 to 3 minutes until golden brown and crispy.
- In a separate pan, melt 4 tablespoons of unsalted butter over medium heat. Add 2-3 minced garlic cloves and sauté for 1 to 2 minutes.
- Stir in 1 tablespoon of soy sauce, 4 tablespoons of honey, 1 tablespoon of brown sugar, and 1 tablespoon of sesame oil. Mix and allow it to thicken for 2-3 minutes.
- Add the fried chicken pieces to the sauce, tossing gently to coat each piece.
- Transfer to a serving dish and sprinkle with sesame seeds and chopped spring onions before serving.
