- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
- Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl until resembling wet sand. Press into the dish and bake for 10 minutes.
- In a large bowl, beat together softened cream cheese, eggs, sugar, vanilla extract, and salt until smooth.
- Spread the cream cheese filling over the baked crust evenly.
- Dice the fresh strawberries and sprinkle them over the cream cheese filling.
- Whisk together flour, brown sugar, and salt. Stir in melted butter until crumbly. Sprinkle over strawberries.
- Bake for 35-40 minutes until the edges are set and the center has a slight jiggle.
- Cool on a wire rack for about one hour, then chill in the refrigerator for at least one more hour.
