Method
 

Step-by-Step Instructions
  1. Prepare 18 squares of parchment paper, each measuring 4” x 4”.
  2. In a medium saucepan, combine water, whole milk, unsalted butter, granulated sugar, and salt. Bring to a rolling boil.
  3. Transfer hot dough into a stand mixer, allowing it to cool for about 4-5 minutes. Gradually add eggs.
  4. Prepare a piping bag fitted with a star tip and fill it with choux pastry. Pipe a closed circle on each parchment square.
  5. In a deep fryer, heat oil to 370°F (188°C) for optimal frying temperature.
  6. Carefully add 2-3 piped crullers to the hot oil, frying for 2-3 minutes on each side until golden brown.
  7. Transfer crullers to a wire rack to cool. Dip tops in strawberry glaze and sprinkle with strawberry sugar.
