Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a muffin tray with coconut oil.
  2. In a large mixing bowl, combine the sweet potatoes, eggs, maple syrup, coconut oil, and coconut milk. Blend until smooth.
  3. In a separate bowl, whisk together the dry ingredients: turmeric, ginger, baking powder, and salt. Gradually add to the wet ingredients.
  4. Pour the batter into the prepared muffin tray, filling each cup about two-thirds full.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let the muffins cool in the tray for 5-10 minutes before transferring to a wire rack.
