Step-by-Step Instructions
  1. Begin by spreading a generous layer of pesto on one side of each slice of thick Italian bread.
  2. Layer half of the cooked chicken breast onto the un-pestoed side of one slice of bread. Follow with slivers of red onion, roasted red peppers, and a hearty sprinkle of low moisture mozzarella.
  3. Preheat your panini press according to the manufacturer’s instructions, which usually takes about 5 minutes.
  4. Carefully place the stuffed sandwich onto the preheated panini press. Close the lid and grill for 3-4 minutes or until the bread is golden brown and the cheese is bubbling.
