- Start by bringing 4 cups of water to a rolling boil in a saucepan over medium-high heat.
- Once boiling, add 2 tablespoons of Kashmiri green tea leaves to the water and reduce the heat to medium.
- Allow the tea to simmer gently for about 5 minutes.
- After steeping, stir in 1/2 teaspoon of baking soda to the deep red tea.
- Continue to boil the mixture for an additional 2 minutes.
- Next, incorporate 1 star anise, 4 crushed cardamom pods, and 1 cinnamon stick into the bubbling tea.
- Let this aromatic blend boil together for 1 minute.
- Reduce the heat to a low setting and allow the chai to gently simmer for 20 to 30 minutes.
- Once the chai has reduced, stir in 1/4 teaspoon of Himalayan salt.
- Raise the heat slightly and gently pour in 2 cups of whole milk.
- Remove the saucepan from heat and place a fine mesh strainer over a large bowl or teapot.
- For sweetness, dissolve sugar or honey in individual teacups, then pour the hot Kashmiri Pink Chai over it.
