- Toast the bread slices in a toaster or skillet for about 2-3 minutes until golden brown.
- Mash the ripe avocados in a bowl and mix with lemon juice, salt, and pepper.
- Spread the avocado mixture evenly over one side of each slice of toasted bread.
- Layer thin cucumber slices on top of the avocado spread.
- Add fresh leafy greens on top of the cucumber.
- Sprinkle thinly sliced red onion and halved cherry tomatoes over the greens.
- Garnish with fresh herbs and drizzle with olive oil or spread as desired.
- Place the second slice of bread avocadoside down on top, press down and cut in half diagonally.
