  • 2 slices bread whole grain, sourdough, rye, or gluten-free
For the Filling
  • 1 medium avocado ripe, firm
  • 1 medium cucumber sliced thinly
  • 1 handful fresh leafy greens spinach, arugula, or lettuce
  • optional cherry tomatoes halved, omit for simpler taste
  • 1 small red onion thinly sliced
  • to taste fresh herbs dill, basil, or cilantro
For Seasoning
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper
For Moisture
  • optional olive oil or sandwich spread cream cheese or hummus as substitutes

Method
 

Step-by-Step Instructions
  1. Toast the bread slices in a toaster or skillet for about 2-3 minutes until golden brown.
  2. Mash the ripe avocados in a bowl and mix with lemon juice, salt, and pepper.
  3. Spread the avocado mixture evenly over one side of each slice of toasted bread.
  4. Layer thin cucumber slices on top of the avocado spread.
  5. Add fresh leafy greens on top of the cucumber.
  6. Sprinkle thinly sliced red onion and halved cherry tomatoes over the greens.
  7. Garnish with fresh herbs and drizzle with olive oil or spread as desired.
  8. Place the second slice of bread avocadoside down on top, press down and cut in half diagonally.
