- Soak the Rice: Rinse 2 cups of glutinous rice under cold water until the water runs clear. Transfer to a bowl, cover with water, and soak for at least 4 hours or overnight.
- Steam the Rice: Drain the soaked rice and place it in a cheesecloth-lined steamer. Steam for 20 to 25 minutes until tender and sticky.
- Prepare the Coconut Sauce: Combine 1 cup coconut milk, 1/4 cup sugar, and a pinch of salt in a saucepan. Heat gently until sugar dissolves.
- Combine Rice and Sauce: Once the rice is steamed, mix with half of the coconut sauce and let sit for 20 minutes.
- Thicken Remaining Sauce: Whisk in 1 tablespoon cornstarch to the remaining coconut sauce and simmer until thickened.
- Slice Mangoes: Peel and slice Ataúlfo mangoes into thick pieces.
- Serve: Portion sticky rice onto a plate, drizzle with coconut sauce, and top with mango slices and optional sesame seeds.
