  • 1 pint Cherry Tomatoes or baby plum or grape tomatoes
  • 2 cloves Garlic crushed
For the Marinade
  • 1 teaspoon Dried Oregano or fresh oregano
  • 1 bunch Fresh Basil or parsley
  • to taste Salt
  • to taste Pepper
  • 3 tablespoons Olive Oil preferably extra virgin
  • 2 tablespoons Balsamic Vinegar or red wine vinegar

Method
 

Preparation
  1. In a large mixing bowl, combine halved cherry tomatoes, crushed garlic, dried oregano, salt, and pepper. Toss gently to coat the tomatoes evenly.
  2. Drizzle olive oil and balsamic vinegar over the tomatoes and stir gently until all tomatoes are coated.
  3. Transfer the marinated tomatoes to an airtight container and ensure all marinade is included.
  4. Refrigerate for at least one hour, preferably overnight for maximum flavor.
  5. Allow the tomatoes to reach room temperature before serving to enhance the flavors.
