Method
 

Cupcake Instructions

  3. Cream sugar and lemon zest, mix in butter until fluffy.
  4. Add eggs one at a time, mix in lemon juice.
  5. Combine dry and wet ingredients, alternating with milk.
  6. Fill muffin cups 3/4 full and bake for 20-22 minutes.
  7. Cool cupcakes in the pan for 5 minutes before transferring to a wire rack.
Frosting Instructions
  1. Beat softened butter until fluffy, then gradually mix in confectioners' sugar.
