  • 100 g Dried Cranberries Chopped dried cherries can be used
  • 200 g Boursin Cheese Can substitute with goat cheese or herbed cream cheese
For the Glaze
  • 100 ml Balsamic Vinegar Essential for the glaze
  • 50 ml Olive Oil Helps keep the pork tender
  • 50 ml Soy Sauce Can swap with gluten-free tamari
  • 50 g Brown Sugar Balances savory flavors
  • 3 tbsp Dijon Mustard Adds a zesty punch
  • 2 sprigs Fresh Rosemary Dried rosemary can also be used
  • 1 tbsp Lemon Zest Fresh zest works best
  • 3 cloves Minced Garlic For extra flavor in the glaze
  • 1 tsp Salt Enhances all flavors

Step-by-Step Instructions
  1. Preheat your oven to 175°C (350°F).
  2. Butterfly the pork loin by slicing it horizontally.
  3. In a blender, combine the thawed spinach, minced garlic, dried apricots, and cranberries.
  4. Transfer the blended filling into a bowl and fold in the creamy Boursin cheese.
  5. Whisk together the glaze ingredients in a separate bowl.
  6. Spread the filling over the butterflied pork loin and roll it tightly.
  7. Place the rolled pork loin in a baking tray and pour the glaze over it.
  8. Roast in the oven for approximately 40 minutes until the internal temperature reaches 63°C (145°F).
  9. Let it rest for 5-10 minutes before slicing.
